Montecucco Sangiovese d.o.c.g. ‘Torente’
Wine made from Sangiovese grapes from the Seggiano vineyard, on Mount Amiata.
The grapes are deposited into small fermentation bins (open plastic vats), placed at the end of the grape sorting table. Spontaneous fermentation without addition of sulfites.
Cap punch-down carried out manually two or more times a day until the fermentation ends. No maceration at the end of the alcoholic fermentation. Malolactic fermentation in concrete vats, fining in new and used Allier oak barrels of varying dimensions for 18 months, then racked in concrete vats until the bottling.
Color - light ruby red. Nose – blackberry, blueberry and aromas of the Mediterranean maquis. Palate – fresh and fruity taste, with hints of mineral and fine silky tannins. Wine pairing - venison, fillet steak and lamb – charcuterie – seasoned cheeses
